Can you imagine how fun it will be to carve our own pumpkins for this year's Halloween festivities!!
On Saturday, Josie and Chris had fun pulling weeds and picking produce in the garden.
With our HUGE zucchini, I decided to make lemon zucchini muffins.
This muffin recipe comes from Cooking Light cookbook.
2 cups all purpose flour
1/2 cup sugar
1 tablespoon baking powder
2 teaspoons grated lemon rind
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup shredded zucchini
3/4 cup milk
3 tablespoons vegetable oil
1 large egg, lightly beaten
cooking spray or paper liners
1. Preheat oven to 400
2. Combine flour and next 5 ingredients in a bowl
3. Combine zucchini, milk, oil and egg; still well. Add to flour mixture, stirring until moist.
4. Spoon batter into 12 muffin cups. Bake at 400 degrees for 20 minutes or until muffins spring back when touched lightly in the center.
5. Remove muffins from pans immediately; place on wire rack.

The lemon and nutmeg have a nice way of hiding the vegetable taste.

ReplyDeleteButterscotch Zucchini Cake
2 cups sugar, l cup oil, 2 eggs, Mix these three ingr. together, cream until smooth
2 l/2 cups flour, l teas. salt, l teas. baking soda, l teas. baking powder, l teas. cinnamon
Add all the dry ingr. together and blend into creamy mixture
3 cups zucchini, grated, add to above, just stir in
Pour into a 9" x l3" greased and floured cake pan
Sprinkle on top: l cup butterscotch chips and l/2 cup nuts (optional)
Bake at 350 for 45 minutes, or until set, do not overbake.
I am always looking for something to do with my overgrown zucchini! I have more of those, than good ones :)

When my kids were little we put zucchini in everthing -- spaghetti sauce, muffins, or whatever. The assumption was it was pretty tasteless and the kids would be tricked into eating it. I'm not a very good cook and my adult children tease me about my many poor tasting dishes. I'm thinking now that a lot of them probably were chock full of zucchini! lol Sherry
ReplyDeleteWow...impressive garden! We have tried growing pumpkins and they never got big--just a small ball and then they shriveled up and died. So glad to see yours looking good! :)
