I experimented with a few ingredients that I had in the refrigerator and came up with a corn and avocado salad recipe that turned out pretty darn good.
Corn salad with avocado
3 to 4 ears of cooked corn
1/2 small onion, chopped
½ red bell pepper, chopped
1/2 green bell pepper, chopped
Salt and pepper
1 medium tomato (or several cherry tomatoes) finely chopped
1 medium ripe avocado, peeled and chopped
Fresh squeezed lime juice to taste
Fresh chopped fresh cilantro leaves for garnish
Garlic salt & pepper to taste
Cook corn and slice kernels from ears of corn from top to bottom with knife. Add ingredients and chill for several hours before serving.

That does look good! We have lots of deer and rabbits, too, but they seem to stay clear of the garden. There are so many cornfields and hayfields out here that I think they find enough to eat there. That's what I'm hoping, anyway!
