A garden tour and corn/avocado salad

Shall we take a stroll to our vegetable garden? I love this shot of Josie's boots and well-worn gardening pants.

If you talk a short walk behind the treehouse and through the woods, you'll find a sunny patch of land. This is where we have our vegetable garden.

A few weeks ago, Chris had to rebuild most of the garden fencing and clear out several downed trees from the big storm. Luckily, most of the damage didn't effect the vegetable plants or his precious new garden gate.

If we didn't have very TALL fencing and a lockable garden gate, the deer and rabbits behind our property would turn our garden into a salad bar.

We are still a few weeks out from harvesting anything substantial, but I recently put together a corn/avocado salad based on a Martha Stewart recipe that I thought you might enjoy. I used fresh cilantro from our herb container garden and added grilled pork loin. YUMMY!!

Heat grill to medium-high. Grill 4 shucked ears of corn, rotating often, until lightly charred (about 15 minutes). Let cool slightly. Carefully, cut kernels from cob. Gently toss with 1 sliced avocado (I used two because we love them so much), 1/4 cup fresh cilantro, 1 tablespoon fresh lime juice, 1 tablespoon extra virgin olive oil, and 1/2 teaspoon coarse salt. The girls enjoyed putting their salad mixture in warm tortilla shells with a bit of low-fat sour cream.

You have such a lovely yard- I am so envious of that fenced in veggie garden! You summer salad looks yummy, we eat many avocados in our household, this will be a perfect addition.

mmmm! yummy! I havent been cooking in days, we had a grad party sat, sunday was the beach plus my kitchen floor isnt done, last night I ordered pizza.. tonight, will just be sandwhiches, till my floor is finished I wont cook. hopefully tomorrow night!
Love your garden fence. I have plenty of space for a garden, but I dont really like doing it. maybe next year. Ive thought about putting in a raised bed and growing some tomatos and peppers.. ehh.. well see!

did the storm yesterday cause much damage? we lost a huge healthy tree in the front. so sad to see it go.

I love how much green space you have! Your little garden buddy looks to be having a good time. I really like the way you have all your favorite herbs together in one big galvanized pot. The salad/tortilla sounds delicious. I love avocado too.
We are having a summer lightening and hail storm at the moment, and I hope not too much damage is being done out there.

I love the lime favoring in the summertime on veggies and chicken. Tori and I are enjoying our little herb boxes, and my family has enjoyed the benefits from it. Maybe one of these days, we can try our hand at veggie gardening. (I grew up helping with gardening, and with this heat and my age, I don't think it would be extremely enjoyable.)
