But everybody is doing it!!!!

Two of my favorite adoptive friends are adopting again from China. Tammy is currently in China getting her daugher, Emma. Isn't she precious?



Nicole and her family adopted from Josie's orphanage in 2008 and they have accepted a referral for another child (different orphanage) and hope to travel in early 2010. Isn't Courtney a cutie pie?



I find myself looking at Special Needs lists again...sigh. Then, the voice of reality sets in (my dear husband) who reminds me that I work full-time and we've finally settled into being a family of four. To make up for it, I made lemon bars when I came home from work today.



This recipe is dedicated to Mrs. Corner who made THE BEST lemon bars growing up.



Ingredients
CRUST:
1/4 cup granulated sugar
3 tablespoons butter or stick margarine, softened
1 cup all-purpose flour

TOPPING:
3 large eggs
3/4 cup granulated sugar
2 teaspoons grated lemon rind
1/3 cup fresh lemon juice
3 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
2 teaspoons powdered sugar
Preparation
Preheat oven to 350°.

To prepare the crust, beat 1/4 cup granulated sugar and the butter at medium speed of a mixer until creamy. Lightly spoon 1 cup flour into a dry measuring cup; level with a knife. Gradually add 1 cup flour to sugar mixture, beating at low speed until mixture resembles fine crumbs. Gently press mixture into bottom of an 8-inch square baking pan. Bake at 350° for 15 minutes; cool on a wire rack.

To prepare topping, beat eggs at medium speed until foamy. Add 3/4 cup granulated sugar and next 5 ingredients (3/4 cup granulated sugar through salt), and beat until well-blended. Pour mixture over partially baked crust. Bake at 350° for 20 to 25 minutes or until set. Cool on wire rack. Sift powdered sugar evenly over top.





PS. Only 2 more days left of work and then we board our 6am train!

Oh, my gosh! We use this same recipe. It's exactly the same. Only a Mrs. Doyle (rather than a Mrs. Corner) gave the recipe to my mom when I was growing up.

And you are the most amazing mom ever...working or stay at home.
I can't believe all of the fabulous things you do with your kids.
Maybe we could become the old women who lived in a shoe :)

Sounds yummy! :) And girl...you just keep on looking at those lists. Maybe someday, God will touch your heart with one of those children and then give you the strength, courage and everything else you need to say yes. :)

Sorry to make you feel sad... :( but thanks for posting a pic of our new sweetheart!! :) You are an amazing woman and mother... and I think you could definitely handle at least one more!! Hugs!!
