Corn Harvest & Corn Salad with Avocado

Although the deer and rabbits have really enjoyed our garden (we had funerals for our pumpkins last week...sigh), we were able to harvest a few ears of corn from our garden over the weekend.

I experimented with a few ingredients that I had in the refrigerator and came up with a corn and avocado salad recipe that turned out pretty darn good.

Corn salad with avocado

3 to 4 ears of cooked corn
1/2 small onion, chopped
½ red bell pepper, chopped
1/2 green bell pepper, chopped
Salt and pepper
1 medium tomato (or several cherry tomatoes) finely chopped
1 medium ripe avocado, peeled and chopped
Fresh squeezed lime juice to taste
Fresh chopped fresh cilantro leaves for garnish
Garlic salt & pepper to taste

Cook corn and slice kernels from ears of corn from top to bottom with knife. Add ingredients and chill for several hours before serving.

Nothing beats fresh sweet corn!!

Especially when it comes from your own garden!
We know the deer liked it too!!

Lovely post as usual. I can only imagine the sadness that overcame poor Josie. It can be so disappointing after all the hard work. How big will the fence be next season? Still drooling over the header! Smiles....Renee

YUM! Wish I loved avocado...but it still sounds great!
Wait until you see my newest craft project! Ran out of materials so spent two hours shopping at Hobby Lobby's in Kentwood and Grandville...now if I would only finish it!

YUM!!! I love sweet corn and we haven't even had any yet (although it doesn't taste that great around here. Midwest sweet corn is the best!)

That does look good! We have lots of deer and rabbits, too, but they seem to stay clear of the garden. There are so many cornfields and hayfields out here that I think they find enough to eat there. That's what I'm hoping, anyway!
