Pesto Pasta with Roasted Chicken

Our herbs have been growing like crazy...especially basil.

If you enjoy pesto, here's an easy sauce that can be added to cooked pasta and roasted chicken.


4 cups fresh basil leaves
1/3 cup pine nuts
3 cloves of garlic
1/2 cup olive oil
1/2 cup Parmesan cheese

Add the basil leaves, pine nuts and garlic to a food processor and process. With the motor running, slowly add a stream of olive oil until a paste is formed. Scrape down the sides of the bowl, add the cheese and process until smooth. Transfer to a bowl; add salt to taste and store refrigerated in sealed jars for one week. Our pesto sauce never lasts long. I use it with cooked pasta and I also love to add it as a topping on crusty bread.

We love pesto in our house (and roast chicken). My basil is not as bushy this year, I can't figure out why. I love your little cooking with Kim K badge - so cute!

LOVE the doll house! I have two old beat up ones and my upcoming project is to turn one into a halloween party house and the other into a christmas one! well, we'll see how that all goes!
