Our garden has produced an abundance of cherry tomatoes this summer.
Thankfully, Josie eats them like candy. Because I can't bring myself to eat them raw (I'm slightly weird like that...although I love salsa...go figure), I came up with a warm pasta dish that includes cherry tomatoes, fresh basil and green onion. Yummy!!
Ingredients:
1 box of penne pasta
2 tbsp extra virgin olive oil
1 clove of garlic crushed
1 green onion cut into small pieces with kitchen shears. I used the onion and the green onion leaves.
4 cups of cherry tomatoes, halved
5-6 fresh basil leaves torn
1/2 cup of Parmesan cheese
salt and black pepper to taste
Cook pasta according to directions. Meanwhile, in a skillet, saute garlic in 2 tbsp of olive oil over medium heat for about 2 minutes. Stir in tomatoes, green onion, season with salt and pepper, saute for about 5 minutes over high heat. Stir in torn basil leaves. Cook for another 2 minutes. Drain pasta and add vegetables. Top with cheese before serving.
