Summer Salad with Honey Mustard Dressing

We've been enjoying all kinds of fresh produce lately from our garden and our local farmer's stand. Here's a new favorite summer salad. The honey mustard dressing is equally yummy on turkey sandwiches.

Honey Mustard Dressing
1/4 cup mayonnaise
1 tablespoon prepared mustard
1 tablespoon honey
1/2 tablespoon lemon juice

In a small bowl, whisk together the mayonnaise, mustard, honey, and lemon juice. Store covered in the refrigerator.

Salad

2 large Gala apples, thinly sliced
2 T fresh lemon juice
1 large bag of spinach or mixed greens
3 cups grilled chicken (I cheated and used rotisserie chicken from the store)
1 small red onion thinly sliced (this was picked off the girls salads)
1/4 cup low fat feta cheese
1 cup dried cranberries or raisins
1 cup roasted pecans (I tend to be extra generous with the pecans)
Honey Mustard Dressing

Toss apple slices with lemon juice. Layer apples, chicken, and the remaining ingredients in a large bowl. Toss with honey mustard dressing just before serving.
